Clearwater Beach Uncorked has been dubbed the hippest, most exciting two-day food, wine, and craft beer festival on Florida's West Coast. The event welcomes thousands of attendees to Florida's award-winning Clearwater Beach. In celebration of its sixth anniversary, Clearwater Beach Uncorked will play host to foodies, wine lovers and craft beer aficionados who long to wiggle their toes in the sugar white sand as they enjoy some of the area's most delectable offerings. Winter Squash Puree
1 Lb. Winter Squash (Acorn, Hubbard or Butternut), Peel, Seed & Chop
1 Tsp. Blended Oil
1 Cup Heavy Cream
2 Tbsp. Butter
2 Ea. Garlic Clove
1 Tsp. Ginger Root, Peeled & Rough Chopped
1 Tsp. Ground All Spice
Salt & Pepper, To Taste

Toss winter squash with blended oil, salt & pepper. Then place on sheet pan and roast in oven at 300* for 1 hour, or until tender. While this is baking, in a small sauce pot on low heat, simmer heavy cream, butter, garlic and ginger and then let rest to infuse. When the squash is done add to blender and strain heavy cream into blender, add all spice and season to taste. You can make this in advance and reheat in a double boiler.

Cider Gastrique
½ Cup Apple Cider Vinegar
¼ Cup Honey
1 Ea. Cinnamon Stick
2 Ea. Star Anise
Pinch of Salt

In a small sauce pot on low to medium heat bring all ingredients to a low simmer and reduce to a syrup consistency. Let cool, then serve.
