Kid's Cookbook

Learning to cook is a skill most kid's will embrace with enthusiasm. With colorful illustrations, fun facts and short stories, kid's find out much more about the world while learning to cook delicious, natural, wholesome treats. Her kid's cookbook was the winner in the New England Book Festival Cookbook category when it came out and she joined Great Day to share her famous Raspberry Pie recipe. Raspberry Pie Recipe

2 cups fresh raspberries (or frozen – do not bother to thaw)

¾ cup honey (You can also use agave nectar or other natural sweetener of choice)

Note: you can adjust amount of sweetener depending on how tart you like your pie

¼ cup flour (whole wheat, natural white or gluten free)

2 tablespoons butter

Pastry (either make yourself or use premade natural pastry if you are in a rush)

Directions:

In medium bowl gently combine raspberries and honey, then stir in flour. You should not have any loose flour after you have mixed it in. If you have excess juice add a little more flour until the mixture is not runny.

Spoon the raspberry mixture on your bottom crust.

Add raspberry-sized dots of butter around the top

Put on top pastry

Bake at 350 degrees for 50 minutes

Let cool!

Note: This pie is actually better the second day. So, it works well to make it in advance.
