Audra Nasser of Tampa's Dinner Done creates a dish that's sweet, but also has a spicy kick to it.
Honey Chipotle Pulled Pork
A deliciously spicy crock pot dish.
1 package pork tenderloin**
1 Tbsp + 1 tsp pureed chipotle peppers
2 Tbls Dijon mustard
2 tsp chili powder
¾ tsp ground coriander
2 tsp paprika
¾ + ½ tsp salt
¾ cup honey
1/3 cup brown sugar
3 Tbsp vinegar
2 Tbsp canola oil
Fresh baked sandwich rolls
First, let's prepare a rub by mixing 1 tsp pureed chipotle pepper, Dijon, chili powder, coriander, paprika and ¾ tsp salt. Rub seasoning over pork tenderloin. Place the pork tenderloin in a crock pot and cook on low all day until pork is tender enough to shred with a fork.
While the pork is cooking, let's prepare a Honey Chipotle BBQ Sauce. Heat ¾ cup honey in the microwave on high for 1-2 minutes until hot. Add brown sugar, vingegar and canola and stir until brown sugar is melted.
Once pork has finished cooking, remove from crock pot and discard remaining liquid. Shred the pork tenderloin and toss in as much of the Honey Chipotle Sauce as you'd like. Spoon on fresh baked rolls with dill pickles. A vinegar-y cold slaw will go great with this sweet BBQ!
** This dish is also great with boneless, skinless chicken breasts instead of pork tenderloin! They shred beautifully in the crock pot!
Did you know? Chipotle peppers are simply smoke-dried jalapeno peppers! They are most commonly found in the Latin section of supermarkets, canned and in adobo sauce.
