Caribbean Mahi Mahi

Take a trip to the tropics with this fun dish!

You'll Need:

4 mahi mahi filets (about 1 ½ lbs)

1 egg

2 Tbsp canola oil

¼ tsp pepper

½ tsp salt

1/3 cup chopped cashews

1/3 cup shredded coconut

2/3 cup panko breadcrumbs

½ cup coarsely chopped mango

½ cup coarsely chopped pineapple

Chopped parsley for garnish (optional)

To Prepare:

Preheat oven to 375F. In a shallow bowl, whisk the egg, canola, salt and pepper together. Dredge each filet through the egg mixture and lay filets in a greased baking pan. Now, let's prepare our Caribbean topper by adding the cashews, coconut and panko to the remaining egg mixture and toss to mix well. Spoon topper over the mahi filets and gently press in.

Bake uncovered about 30 minutes until filets are flaky throughout. The actual cooking time will depend on the thickness of the filets! Top each filet with a sprinkling of mango, pineapple and fresh chopped parsley just before serving.

Serves 4. Nutritional Information Per Serving: 410 cal, 18g fat (4.8g sat), 116mg chol, 532g sodium, 23g carb, 2g fiber, 38g protein.

Nutrition Notes: Significantly lower the amount of fat in this dish by reducing the Caribbean topper (cashew, coconut and panko) by half.
