
Spicy Baked Chicken Flautas
A healthy Tex-Mex dish the whole family will love!
You'll Need:
- 1 medium onion, diced
- 2 teaspoons minced garlic
- 1 jalapeno pepper, minced
- 2 medium tomatoes, diced
- 1 1/8 tsp salt, divided
- ¾ tsp chili powder
- 4 cups shredded rotisserie chicken
- 12 small flour tortillas
- 1 egg
- 3 tbls canola oil
- Fresh lime
- Fresh chopped cilantro
To Prepare:
Sauté onions, garlic, jalapeno, tomatoes, salt and chili powder about 5 minutes until lightly browned. Stir in chicken and set aside.
Spoon equal amounts of chicken into each tortilla and roll like a cigar. Place, seam-side down, on a greased baking sheet. In a small bowl, whisk together egg and canola. Brush egg-canola mix over flautas. Bake at 400F for about 20 minutes until top begins to brown and flauta is crisp.
Serve topped with a squeeze of lime and a sprinkling of fresh cilantro. Guacamole and salsa on the side if you'd like!

Nutrition Notes: Save 6g of fat and 60 calories by omitting the canola oil! Significantly reduce sodium by using a salt substitute in place of salt.
