Today we'll be making a spectacularly simple dessert... Classic Crème Brulee with Peaches.
You'll Need:
- 6 large egg yolks
- ¾ + ¼ cup white sugar
- 3 cups heavy cream
- 1 tsp pure vanilla extract
- 1/3 cup ripe peaches, finely diced
- Hot water
To Prepare:
Preheat the oven to 325F. In a medium bowl, whisk egg yolks and ¾ cup of sugar until the sugar is dissolved. Whisk in the cream gradually and then add the vanilla extract.
Place four ramekins in a baking pan. Spoon a tablespoon of diced peaches in to the bottom of each of the ramekins and then add the crème brulee mixture gently on top. Now pour hot water into the baking pan until it covers the bottom half of the ramekins. Bake for 45-60 minutes until the edges of the crème brulee are set - (the center will still jiggle!)
Remove ramekins from the baking pan and refrigerate for at least one hour (and up to two days).
When you're ready to serve, sprinkle 1 tablespoon of sugar over the top of each ramekin and place under the broiler in the oven* until the sugar caramelizes and forms a crispy top.
Top with the remaining diced peaches as garnish. And there you have it. Classic Crème Brulee with Peaches.
(This makes four 7-ounce ramekins)
*If you have a kitchen torch, that can also be used to caramelize the sugar!
