Baked Eggs & Ham
A unique and delicious Easter brunch dish!
You'll Need:
2 cups prepared mashed potatoes (cooked, seasoned)
2 cups diced ham
6 tsp fresh chopped chives
4 large eggs
A dash of salt and pepper to taste
6 tsp parmesan cheese
4 Tbsp heavy cream
4 14-ounce ramekin dishes
To Prepare:
Preheat oven to 375F. In a buttered ramekin dish, add ½ cup cubed ham. Top with ½ cup mashed potatoes and then, using the back of a spoon, make a slight indent in the mashed potatoes. Sprinkle 1 ½ tsp of chives and parmesan cheese over the mashed potatoes and then crack an egg on top of the potatoes.
Sprinkle lightly with salt and pepper and then top with 1 Tbsp of heavy cream. Repeat for the remaining ramekins. Bake for 15-20 minutes until the egg whites are completely set and the yolks have cooked to your desired consistency*.
* We recommend baking until the yolks begin to thicken, but are not fully cooked.
Did you know?
Spooning a small amount of cream over the egg before baking helps prevent the egg from drying out as it cooks! Also, if your ramekins are a different size, simply adjust the amount of ingredients to fit your dishes.

Nutrition Notes:
Significantly lower fat by substituting chopped turkey for ham and fresh cooked, diced potatoes for prepared mashed potatoes and subbing low-fat milk for heavy cream. Lower sodium by replacing ham with low-sodium meat or fresh steamed veggies, by using less or no parmesan cheese and by using a salt substitute instead of table salt.
