Marisa McClellan has established herself as an expert and a pioneer of urban canning and preserving. As the creator of foodinjars.com, one of the internets most popular and enduring canning blogs and one of Saveur Magazine's "Sites We Love" in 2011, McClellan has lots of ideas on how to put the seasons bounty to good use. Teaching city dwellers and home cooks how to extend the life of their farmers' market purchases is her passion. Her new book includes recipes for jams, pickles, preserves and other seasonally focused edibles that can be put together quickly and easily in your home kitchen.
McClellan grew up in Oregon and learned to can local blueberries, blackberries and apples from her mother. She has taken those techniques and made the process accessible by using smaller batches of ingredients and cutting down on cooking time creating recipes with appeal for both canning novices and more accomplished cooks.
Preserving by the Pint is meant to be a guide for saving smaller batches from farmers' markets and produce stands— preserving tricks for stopping time in a jar. Arranged by the season, the recipes range from salsas and pizza sauce to marinades and barbecue sauces, savory pickles to sweet jams and spreads and everything in between.
