Spring Hill, Florida-Chef Gaetano DeLuca came to Spring Hill with the hopes of opening up a successful Italian restaurant. Less than one year later, Salute Italian restaurant was named the best Italianeatery bya Hernando Today Readers Poll.

It starts with the bread: each loafis made fresh daily. Salute is famous for their olive bread, pepperoni bread and Italian bread. That warm bread can be dipped into a plate of fresh olive oil.

The name "Salute"in Italian means "health." DeLuca's philosophy is, "Everybody has good and bad days. When you go out to dine, it's a time of family, no worries. You want to have a good time. Salute is about family, good food and saluting good health."

Chef Gaetano loves to make the rounds in his restaurant, making sure everyone is happy. If you're not sure what you want, he can create a new dish based on what you like.

Penne Chicken Primavera
Sauteed chicken, mushrooms and broccoli in our rosa sauce.

Penne ala Vodka
Smoked salmon in a vodka cream sauce.

Chicken Gaetano
Boneless Chicken breast, shrimp and scallops sauteed chicken base cream sauce.

Chicken Salute
Boneless Chicken breast sauteed with roasted pepper, artichokes, kalamata olives, melted mozzarella with a lemon white wine butter sauce.

Spaghetti with Shrimp Marinara
Jumbo shrimp, sauteed in marinara sauce.

Linguini Pescatore
Mussels, clams, shrimp, calamari and crab meat sauteed in our famous marinara sauce.

Veal Francese
Veal scaloppini, egg dipped and pan-fried to a golden brown, sauteed in a lemon white wine sauce, with a touch of capers.
