A look at the new food hall coming soon to Pasco County

TRINITY, Fla. — From farm fields to massive growth and development, there's a new buzz in the town of Trinity about a big project in the works.

Crews are busy at work building a new food hall in Pasco County. People like John McGregor who grew up in this area said this project is one of a kind.

“Before it was Trinity, it used to be a cow field back in the day,” McGregor said. 

Miles of empty space is now being turned into a hub for foodies.

“If you look all down 54th street there's a lot of new construction going on,” McGregor said.

The 18,000-square-foot food hall being built on Trinity Boulevard is something Matt Thompson believes this town was missing.

“We found ourselves driving to Tampa to Pinellas County to get the food that we really wanted to eat. When we came up with the concept to bring this to this area, we realized that a lot of people can stay in the area. They don't have to drive out to Hillsborough County and to Pinellas County to be able to have really good food options as well as good beer,” Thompson said.

Thompson and John McGregor are brothers-in-law who went into business together about 10 years ago. They said Trinity is a prime Tampa Bay location but say the Collective at Escape is going to have a huge impact locally.

“How do we bring something back here that you get in Tampa, but how do we bring that here locally,” McGregor said.

The food hall will feature six local Tampa Bay businesses along with the Escape Brewing Company which will bring in foodies while keeping dollars in the county. This is something county leaders said is a win-win. 

“Instead of taking those sales taxes to other counties we're going to be able to generate additional revenue for the county which will translate into better benefits for the community,” Consuelo Sanchez, the Florida Sport’s Coast Tourism deputy director, said.

Developers are hoping to have this project done in August.
